  • 1 tsp jaggery (or brown sugar)
  • 1 tbsp sea salt
  • Filtered water (as needed)

How to Make Vegan Kimchi – Indian Style:

  • Toss cabbage, carrots and radish with sea salt. Leave for 1 hour to drain.
  • Drain excess water (do not wash).
  • Add ginger-garlic paste, chili powder and jaggery. Mix well.
  • Pack tightly into a sterilised glass jar, pressing down on the vegetables.

Make sure the vegetables are submerged in their liquid. Leave at room temperature for 2-3 days.


Open daily to release the gas. Once sour, keep it in the fridge and use within 2 weeks.
