Hello friends welcome to the Healthy vegetarian recipes blog, today I brought to you my most popular healthy tasty and rich recipe *malai cofta recipe* it is  a vary special dish for guests. Malai koftas are not only popular in Indian cuisine, but are also popular in Middle Eastern, Balkan and Asian cuisines. Malai Kofta is made in two ways in India. One with white gravy and the other with orange gravy. This recipe adds to the glory of festivals and parties. This vegetable is preferred to be prepared on special occasions   Malai kofta recipe is a very tasty, healthy and nutrition rich vegetable dish. Paneer khoya and gram flour ball-shaped koftas are a melt-in-the-mouth royal curry made with a fine gravy of onions, tomatoes and cashews. It's taste is very wonderful, in North India people eat it with great fervor, pppp People make it with potato and corn flour but I prefer to make it with gram flour, I like the taste of gram flour. After tasting this once, you feel like eating again and again.
You can eat it with puri paratha rice tadoori roti or naan This vegetable is mainly made in lunch and dinner.

Time to cook   1, 1/2 hour


Ingredients for kofta 


 200 gram Paneer

 100 gram Khoya

 2 table spoon gram flour (besan)

1 table spoon corn starch 

1/2 tea spoon cumin seeds

1/2 tea spoon chopped garlic

2 table spoon chopped dry fruits raisins and almonds 

1/2 tea spoon Salt 

1-1/2 table spoon chopped coriander leaves 

1/2  fine chopped green chilli 

1/4 tea spoon garam masala

1/4 tea spoon red chilli powder

1 table spoon sugger or hunney(optional)

Oil for frying 

Water as needed

How to make restaurant style Malai cofta recipe at home?


Take a deep mixing bowl add 200 gram greated paneer,100 gram Khoya, 2 table spoon full gram flour ( besan ),1 table spoon corn starch, 1/2 tea spoon full cumin seeds, 1/2 tea spoon salt, 1/2 tea spoon red chilli powder, 1/2 tea spoon fine chopped green chilli, 1 table spoon chopped almonds, 1 table spoon chopped raisins, 1/2 tea spoon chopped garlic 1-1/2 table spoon chopped coriander leaves, 1/4  tea spoon full garam masala powder, 1 table spoon sugger or hunney, mix properly all the ingredients add water as needed, make dough


Divide equally in 8 parts, give properly smooth shape them like round balls.

Now take a frying pan put oil inside the pan and heat it on the low flame

Fry all the kofta balls on the low flame till they turn golden brown. Remove them from oil. 
 

Ingredients for kofta gravy


1 bey leaf (optional)

2 big onions

2 big tomatos 

2 - 3 green cardamom

3  cloves (optional)

1/2 inch peace of cinnamon  (optional)

15 to 18 cashew nuts

1 tea spoon ginger garlic paste

Salt according to taste

1/2 tea spoon full red chilli powder

1/4 tea spoon termerik powder 

1 table spoon oil

2 table spoon cream for garnish 

1 tea spoon coriander leaves for garnish

1 glass of water or milk (your choice)

Make smooth gravy


Take a pan with oil and  put it on the cooktop, put 1 bey leaf, green cardamom, cloves, ginger garlic paste. Saute them for 60 seccons, put ruffly cutted onions , saute them turn light pink, add ruffly cutted tomatoes and saute for 3 - 4 minutes add cashew nuts, cinnamon peace, salt, termerik powder, red chilli powder, garam masala,green cardamons, saute them for 2-3 minutes. Now pour 1/2 cup of water and cover the pan with lid until all ingredients turned soft.  Let it some cool, blend it with a power full blender and make a super smooth texture 


Now put this mixture in the pan and cook until the mixture leaves the bottom and the smell of raw onion and garlic goes away, after that add a glass of water or milk and cook for 10 to 15 minutes  If you feel that the gravy is too thick then add some more water or milk. your super smooth gravy is ready. 

Note if you add milk instead of water then its taste increases manifold.

 Now put all the koftas in a serving bowl, pour gravy on top and sprinkle with cream and coriander leaves.Garnish and serve with roti, naan, puri paratha or jeera rice and win lots of compliments for yourself.
