Ingredients for out side

  2 Cup Maida (250 gram) 

  1/2 tsp Ajwain 

  1/4 Ghee or oil

  1/2 tsp Salt

Ingredients for stuffing

  • 400 gram Potatoes
  • 10 to 12 Cashew nuts (optional)
  • 30 to 32   Raisins (optional)
  • 1/2 Cup of green peas
  • 2 to 3 green chilli (fine chopped) 
  • 1 Inch peace of Ginger
  • 1 Tea spoon Coriander Powder
  • 1/2 Red Chili powder
  • 1 tsp Aamchur 
  • Salt according to taste
  • 1 Table spoon Coriander leaves (fine chopped).

  • First of all, take two cups of all purpose flour (Maida) in a big utensil, add half teaspoon salt, half teaspoon celery and about 50 to 60 grams of oil or ghee,


  • mash it well with both hands and make it homogeneous, now adding water little by little, knead the flour hard. Soften it by rotating it well with both hands and keep it covered with a wet cloth for 15 minutes.  

  • Prepare the stuffing Take about 400 grams of potatoes and boil them for the stuffing.Take it and after it cools down peel them off and keep 1/2 cup green peas boiled and drain the water. 

  • Heat some oil in a pan on medium heat, add cumin seeds and fry till golden 

  • Add half a cup of boiled green  peas to it and fry it for a minute, add boiled potatoes and mash a little, add salt as per taste, add roasted cumin powder, coriander powder, red chili powder, mango powder, finely chopped green chilies, and fenugreek leaves.If you want, you can also add 100 grams of paneer cubes and cashew raisins in it

  • Now fry this mixture a little. Because the taste of the stuffing made by roasting increases a lot 

  • Now heat  the oil in a large pan on medium heat and divide the dough into equal parts and make 6 equal balls.

  • Roll them one by one into thin lengthwise oval pooris and cut them from the center and apply a little water on the cut edges.

  • Make a triangle shape by joining the cut portion of the rolled out portion and close both the edges properly.

  • Fill 2to2and a half tablespoon stuffing masala Potato in the part which is open from the top side, keep in mind that do not fill too much masala, it does not keep the taste of your samosa good and it will be difficult to close the edge and a little water on the top edge. Cover it and seal it well, similarly make the rest of the samosa collect 

  • When the oil is hot, lower the flame. Keeping the size of the pan in mind, keep the samosas in the oil one by one and put as many samosas as you can and fry them on low flame till they become golden, in the same way fry the remaining samosas.

  • Your hot and delicious samosas are ready, serve them with green chutney or sweet and sour tamarind chutney with tea in evening snack and surprise your family by feeding them homemade samosas.

 3 to 4 green chilli 
1 big sized chopped onion
1 inch ginger 
3 to 4 cloves garlic 
1/4 Tea spoon Red chili powder 
1/2 tea spoon salt
