     Hello friends welcome to my healthy vegetarian recipes blog in this  article I am going to talk about a most popular healthy and delicious recipe  *Daal makhani Recipe* which is also called maa ki daal. It is prepared by mixing whole black urad and kidney beans. It has a rich velvety taste. It is cooked very slowly but continuously for many hours. But nowadays it is also made  fast in the pressure cooker. To give creamy rich flavor to this dal, in the traditional method, it is soaked overnight and cooked for hours in an earthen pot. When cooked in this method, it tastes like butter. But the taste that is made in cooking for hours is not made in pressure cooker at all, so it should be cooked on low flame as far as possible, but nowadays due to lack of time, it is mostly preferred to make it in pressure cooker only.   his is a favorite dish of the Indian people. Once on the tongue it's tast, then you will forget to eat any other daal dish. You will definitely find this dal in every Punjabi's house and on all kinds of festivals. This dal is a staple of Punjabi cuisine. This dal is also called langar dal. Because it is mostly cooked in all of Gurudwara's every day. This creamy dal recipe is highly relished by the diaspora Punjabi community in India and around the world  This dal is the main source of protein and carbohydrate.This dal can also be eaten with plain rice, cumin, rice, tandoori roti, puri, naan or with garlic naan. 

    Eating green vegetables in the rainy season can be heavy for health and pocket, because these vegetables become very expensive during the rainy season, due to which these vegetables become full on the pocket and insects are also produced in them in large quantities. Because of which green vegetables have a bad effect on health, so friends, to keep both health and pocket balanced together, it is beneficial to consume dal during rainy days, especially this dal makhani can be a better option for health. Keeping in mind the health of yourself and your family, you must definitely eat dal makhani these days. 


     INGREDIENTS 


    For pressure cooking dal 


    *250 gram black lentils (urad) daal
    *100 gram kidney beans (rajma)
    *water for soaking
    *5 cups water (for pressure cooking)
    *salt to taste

    Ingredients for dal makhani recipe:

      *    2 tbsp ghee 

      *    1 tsp cumin seeds

      *    1 tsp coriander seeds 
      
      *    2 black cardamoms

      *    2bay leaf (tej patta)

      *    3 (finely chopped)large tomatoes

      *   1 tbsp ginger-garlic paste

      *    turmeric powder1/2 tsp

      *    2 large onions (finely chopped)

      *    1 tsp coriander powder

      *    1/2 tsp cumin powder

      *    1 tsp kashmiri chilli powder (or as per your spice levels

      *    salt according to taste

      *    water (or as required)

      *    100 gram fresh cream (or as required)

      *    1_1/2 tbsp coriander leaves (fine chopped)

      *     100 gram curd

    Ingredients for tempering 

       *    2 tbsp butter 

       *    2 pinch of asafoetida (hing)

       *    1 tsp kashmiri red chilli powder

       *     1/2 tsp garam masala powder (optional)


    INSTRUCTIONS 

    How to make Daal makkhni easily at home like restaurant?

    For pressure cooking dal 

    Soak 250 grams black lentils (urad) dal and 100 grams kidney beans overnight in open water in a vessel. 

    Wash the dal thoroughly and drain all the water Put 5 cups of water in the pressure cooker, add half a teaspoon of salt and close the lid of the cooker and put it on the gass. Put the cooker on medium heat and cook till 5 whistles

     Now take a large pan, add 2 tbsp of ghee it and add 2 bay leaves and fry till fragrant. 

    Now add two pinches of asafoetida in it and fry it a little and add all the standing spices and fry it till it becomes fragrant and add one tablespoon of ginger garlic paste and let it fry for some time. 

    Then add two finely chopped onions and fry till they turn light pink. 

    Now add half teaspoon turmeric powder, one teaspoon Kashmiri red chili powder, half teaspoon chili powder, one teaspoon coriander powder and add salt as per taste and stir for a few seconds (reduce or increase salt and red chili according to your taste can also) Now add tomato puree and fry it till it releases ghee. Now put boiled lentils in it and wait for 15 minutes.Cook for 20 minutes, add 50 grams of butter, 100 grams of whipped curd and cook it well, now add 50 grams of cream and mix well, add 2 tablespoons of finely chopped coriander leaves and mix

    Your delicious hotel-like  Daal Makhni akhani Recipe at home, is ready, now garnish it with remaining cream and coriander leaves and serve it with Roti Paratha, Jeera, Rice, Plain Rice, Naan, Tandoori Roti or Kulcha, you can serve it with Pickle, Raita and Salad.If you feed your family, then its fun becomes even more double, then friends eat and feed Dal Makhani and get compliments. 

    Note. Dal Makhani can be served in lunch or dinner.
